CREED
Keeping this short and sweet for the canon-unfamiliar.
Mandalorians are space knights who follow a code known as the creed—a central force in a Mandalorian's religion. Bound by the creed, the solution to some of Din's encounters are often black and white (favorable or otherwise).
The creed acknowledges weapons as part of its code, and Din has a considerable stash on his person at all times.

DIN DJARIN
“That is the opposite of our Creed. Loyalty and solidarity are the way.” ― Mando
His name is Din Djarin, but you don't know that. Call him Mando.
Once merely a faceless bounty hunter, Din has found an especially strong sense of purpose in being Grogu's guardian. Loyalty is a trait that makes up a good chunk of his core, and he expresses immense loyalty to his unlikely companion, going to great lengths to ensure his safety.
Bounty hunting used to be all he knew. He's good at it (he's very expensive), but he was sheltered for the longest time. He had gone some thirty years not knowing he was a Child of the Watch. Presently, he's learning there are other ways to be Mandalorian.
Din has an impatient streak and takes everything seriously, but he gets things done and always honors his commitments. He is mostly defined by his loyalty to anyone and anything he cares about (which, admittedly, isn't a whole lot), yet exhibits impartiality when expressing himself. Only those who get to know him closely are able to spot the subtle hints of change in his otherwise neutral state. Anger and frustration are among the few emotions he does make clear, though they rarely linger into a mood.
He also isn't a fan of droids. They can't be trusted. We've come a long way, baby.

GROGU
“You are going to stay here, so I want you to be respectful and mind your manners.” ―The Mandalorian
Din's love for Grogu has molded him in a variety of ways. Since meeting him, Din has learned to lean firmly on the loyalty and solidarity aspects of the creed. Before he knew of the Children of the Watch (orthodox Mandalorian cult that raised Din as a foundling), he would take liberties to honor those aspects. He has taken off his helmet to avoid falling behind on a rescue mission for Grogu, for example, which his tribe's customs are heavily against. He respects the creed and everything Mandalorians stand for, but the aphorisms that tend to leave little room for unanimity in favor of perspective and experience are what take precedence.
The force-sensitive bundle of joy in his care is always at the forefront of those values. Din has shown he communicates his love passively through action, and occasionally, through words of affirmation. He encourages Grogu to be the best that he can be, is stern with him when the situation calls for it, and makes sure the child knows that he's number one on his priority list.
Their bond is unbreakable.
